Choose from three topping options: a rich dairy mash, a completely dairy-free version, or a high-protein egg white topping that bakes into a light, fluffy crust. Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat beef tallow in a large skillet over medium-high heat.
  3. Brown the ground lamb or beef until fully cooked.
  4. Season with salt.
  5. Stir in bone broth and gelatin (if using) and simmer for 3–5 minutes.
  6. Transfer the meat mixture to a 9 × 13-inch baking dish.
  7. For the dairy topping, beat all topping ingredients until smooth and spread over the meat.
  8. For the dairy-free topping, whisk yolks, tallow, broth, and salt until creamy and spread over the meat.
  9. For the egg white topping, gently cook egg whites until softly set. Blend with gelatin (if using), broth, salt, and tallow until smooth and fluffy, then spread over the meat.
  10. Bake for 25–30 minutes until hot and lightly golden.
  11. Broil for 2–3 minutes if desired.
  12. Rest for 10 minutes before serving.
