This keto stuffed cabbage casserole has all the comforting flavors of traditional stuffed cabbage rolls without the work of rolling individual leaves. Tender cabbage, seasoned ground beef, rich tomato sauce, and melted cheese are layered together for an easy family dinner. Ingredients

  • 2 pounds ground beef
  • 1 medium head green cabbage, chopped (about 8 cups)
  • Optional: 3–4 cups frozen or fresh riced cauliflower
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 (14.5-ounce) can no-sugar-added diced tomatoes
  • 1 (8-ounce) can no-sugar-added tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce or coconut aminos
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Sauté the onion until softened, then add the garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned. Drain excess grease if needed.
  4. Stir in the diced tomatoes, tomato sauce, tomato paste, Worcestershire sauce, Italian seasoning, smoked paprika, salt, and pepper. Simmer for 10 minutes.
  5. Steam or sauté the chopped cabbage for 5–7 minutes until just tender.
  6. If using cauliflower rice, microwave or sauté it for 3–5 minutes, then drain well.
  7. Layer half the cabbage, half the cauliflower rice if using, half the meat sauce, and half the mozzarella. Repeat the layers.
  8. Top with the cheddar cheese.
  9. Bake uncovered for 35–40 minutes until bubbly and golden.
  10. Let rest for 10 minutes and garnish with parsley before serving.
