Ingredients

  • 4 slices thick-cut bacon
  • 2 tbsp avocado oil (plus 1 additional tbsp)
  • 1 lb ground chicken
  • 6 eggs
  • 40g collagen
  • 2 tbsp bovine gelatin
  • 2 tbsp baking powder
  • Optional: Everything Bagel Seasoning (for topping)

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, cook bacon with 2 tbsp avocado oil until fully cooked.
  3. Add ground chicken to the pan. Cook until fully browned and cooked through.
  4. In a high-powered blender (like a Ninja), add eggs, collagen, gelatin, baking powder, and remaining 1 tbsp avocado oil.
  5. Add the hot bacon and chicken mixture into the blender.
  6. Blend until smooth and fully combined.
  7. Grease a muffin tin or baking dish with avocado oil or bacon grease.
  8. Evenly divide mixture into 12 portions.
  9. Sprinkle Everything Bagel Seasoning on top of each portion before baking, if using.
  10. Bake for ~20 minutes, or until set and lightly golden.
  11. Let cool slightly before removing.
  12. Store in fridge for easy grab-and-go meals.
  13. Reheat or enjoy cold.
