Instructions

  1. Bloom the beef gelatin in warm water for 2 minutes.
  2. For the egg white version, combine gelatin mixture with egg whites, salt, and seasonings.
  3. For the whole egg version, combine gelatin mixture with eggs, salt, and seasonings.
  4. Blend until completely smooth.
  5. Heat a nonstick skillet over medium-low heat.
  6. Lightly grease if needed.
  7. Pour about ¼ cup batter into the skillet and swirl into a thin circle.
  8. Cook 1–2 minutes until set.
  9. Flip and cook 20–30 seconds longer.
  10. Transfer to a cooling rack and repeat with remaining batter.
  11. Cool completely before stacking and storing.
