This keto carnivore chocolate mousse delivers a luxurious, chocolatey texture while keeping carbohydrates extremely low. Egg yolks create richness, whipped egg whites provide lift, and a small amount of cocoa gives the mousse its deep chocolate flavor. Choose either the dairy version with heavy cream or the dairy-free version made entirely with eggs and animal-based ingredients.

Perfect for a special dessert while maintaining a keto lifestyle.

Ingredients

  • 4 large eggs, separated
  • 3 tablespoons allulose (or equivalent monk fruit sweetener)
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon beef gelatin
  • 2 tablespoons warm water
  • 1 pinch sea salt
  • 1 cup heavy whipping cream (dairy option)
  • 2 additional egg whites (dairy-free option)

Instructions

  1. Sprinkle the beef gelatin over the warm water and let it bloom for 5 minutes.
  2. In a large bowl, whisk the egg yolks, sweetener, vanilla, cocoa powder, and salt until smooth.
  3. Gently warm the bloomed gelatin until fully dissolved and whisk it into the yolk mixture.
  4. In a separate bowl, beat the 4 egg whites to stiff peaks.
  5. For the dairy version, whip the heavy cream to medium peaks and fold it into the chocolate mixture.
  6. Gently fold in the whipped egg whites until no streaks remain.
  7. For the dairy-free version, whip the additional 2 egg whites to stiff peaks and fold them into the chocolate mixture before folding in the remaining egg whites.
  8. Divide among serving dishes.
  9. Refrigerate for at least 2 hours until set.
  10. Serve chilled.
