These carnivore cookies use finely crushed pork rinds in place of flour, creating a surprisingly cookie-like texture while keeping carbs extremely low. Collagen peptides and beef gelatin add structure and protein, while allulose or monk fruit provide sweetness without sugar.

They’re perfect for a high-protein snack, post-workout treat, or carnivore dessert.

Ingredients

  • 1 cup finely crushed plain pork rinds
  • 1/2 cup collagen peptides
  • 2 tablespoons beef gelatin
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 1/4 cup allulose (or equivalent monk fruit sweetener to taste)
  • 1 pinch sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the crushed pork rinds, collagen peptides, beef gelatin, and salt.
  3. In a separate bowl, whisk the eggs, melted butter, vanilla extract, and allulose until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until a thick dough forms.
  5. Let the dough rest for 3–5 minutes so the gelatin can absorb moisture.
  6. Scoop tablespoon-sized portions onto the prepared baking sheet and gently flatten into cookie shapes.
  7. Bake for 10–12 minutes, or until lightly golden around the edges.
  8. Allow the cookies to cool completely on the baking sheet before serving. They will firm up as they cool.
